Stuffed Okra à la Tanvi

I have been having a moment with stuffed vegetables lately. I find a vegetable and I want to stuff it with stuff :D - This was an off-the-cuff impromptu cooking decision, with whatever spices I could find in my pantry. But it turned out so good (if I may say so myself) that I tried it again the following week, and it tasted just as good. Hence, the documentation on the blog. In case I forget it in future.   


1/2 lb Okra (Bhindi)
2 tablespoons finely chopped ginger
4 cloves finely chopped garlic
1/4 cup gram flour (Besan)
2 tablespoons of fennel powder
1 tablespoon sesame seeds (I used za'atar) 
1 tablespoon coriander powder
1/4 teaspoon turmeric powder
1 teaspoon cayenne pepper (red chilli powder)
1/2 teaspoon garam masala
1 tablespoon dry mango powder
1/2 tablespoon sugar
1½ tablespoons + 3 tablespoons Oil

  1. Wash okra thoroughly in water and dry them using cloth or paper napkin. 
  2. Dry roast gram flour over low-to-medium flame until it turns light brown. Stir constantly.
  3. Transfer gram flour to a deep bowl. Add all the ingredients and 1½ tablespoons oil and salt. 
  4. Mix well. 
  5. Remove top and tail section of each okra and slit it length wise from one side (make sure to not to cut it into two pieces.) Take each okra and stuff it with approx. 1/2 to 1 teaspoon stuffing.
  6. Heat 3 tablespoons oil in a heavy based or non-stick pan over medium flame. Add stuffed okra. Sprinkle salt over it and cook for a minute over medium flame. Stir once in between. 
  7. Continue to turn them between 2-3 times until it turns dark green.
  8. Sprinkle leftover stuffing masala over it and mix well.
  9. Turn off flame.
  10. Serve as appetizer or a main dish.

  3. Great recipe Tanvii Ji! Easy steps to prepare this vegetarian recipe, because all the ingredients required, should be available in normal kitchen. Illustrated steps with images makes it more user-friendly. I appreciate your sincere efforts.

  7. Okra is my favorite vegetable in the whole wide world..But after coming to the US, whenever I have tried preparing it, it's always so soggy! I am definitely going to give this recipe a try. Thank you for sharing :)
