Indian Style: Vegetable Stir Fry

1 Tablespoon of Olive Oil
2 Teaspoons of fine chopped Garlic
1 Teaspoon of Cumin Seeds
1 Teaspoon of Turmeric Powder

1. Teaspoon of Coriander Powder
1/4 Chopped Onion

2 Chopped Chillies (Serrano Peppers)
1 Diced Tomato
2 Cups of Mixed Vegetables
Salt to taste

1. Heat the oil on medium high. Once heated add cumin seeds, turmeric powder and coriander powder and stir for about under a minute. 
2. Add and sautée garlic and onion till they are golden brown
3. Add tomato and green chillies [Serrano pepper] and stir a few times
4. Add the vegetables and stir till they are well mixed
5. Add salt to taste

I like the vegetables crunchy so I do not cook them for too long, but some people like when soft and well cooked. So that's a personal preference.
