2 Boiled, peeled and well mashed potatoes
2 tsp coriander powder
1 tsp cumin powder
1 tsp red chilli powder
Salt to taste
2 tbsps finely chopped coriander leaves
2 cups whole-wheat flour
2 tbsps vegetable, sunflower or canola oil
Water to Mix
Chopped Chillies (Serrano Peppers, Onions)
Boiled & Mashed Potato mixed with the spices, chillies, and onions
Slowly add water to the flour, a little at a time.Knead well to make a smooth dough.
Cover and set aside for 30 minutes.
Lightly roll out the parantha again. You will have to sprinkle some loose flour regularly
to avoid the dough to stick while rolling.
Place the flat dough on a pre-heated Tava
Add 1 tsp oil to the bottom of the dough and turn it when it starts rising.
Add oil to the other side now and repeat.
Take it off the Tava when both sides are golden brown.
Serve with Plain Yogurt and some Indian Chutneys!
I have been sitting on this post for over 3 months 'coz I was too lazy to type it and now I regret that since I meant to show my 'perfect-round-paranthas' to Amma. But thankfully now she doesn't need computer & internet to see them. She can just see them! :)
