Sweet & Spicy Corn Bread Muffins
Ingredients
1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1/2 cup granulated sugar
1 teaspoon salt
1 cup whole milk
2 large eggs
1/2 stick butter, melted
1 tablespoon cup honey
1 tablespoon red-chilli powder
2 fine chopped green chillies [Serrano peppers]
Directions
1. Preheat oven to 400 degrees F.
2. Into a large bowl, mix the cornmeal, flour, baking powder, sugar, and salt. In another bowl, whisk together the whole milk, eggs, butter, and honey. Add the wet to the dry ingredients and stir until just mixed.
3. Place muffin paper liners in a 12-cup muffin tin. Evenly divide thecornbread mixture into the papers. Bake for 15 minutes, until golden.

yum these look good! I saw over on Jammer's blog your comment about being vegetarian and I'm vegan so Thanksgiving dinner is always complicated for me too. I make some good vegan stuff, but everyone else has the traditional stuff that I can't eat. I could easily replace the eggs and milk in this though, I might give it a try.
